Rice Paper Pizza Rolls

Ingredients
  

  • 6 rice paper sheets
  • 2 large eggs
  • 1 1/2 cups shredded Gouda cheese about 5 oz
  • 3-4 slices deli chicken or turkey
  • 1/4 cup finely chopped pepperoni

Homemade pizza sauce (or use store-bought one)

  • 1/2 cup tomato passata
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp dried basil

Instructions
 

  • In a wide, shallow bowl, whisk the eggs until well combined. Dip each rice paper sheet in the egg mixture for about 5 seconds, making sure it’s fully coated.
  • For each pizza roll, lay 3 rice paper sheets side by side with a slight overlap near the center. Spread a thin layer of pizza sauce, then add a layer of shredded Gouda, chicken or turkey slices, and chopped pepperoni.
  • Carefully fold the sides of the rice paper over the filling, then roll it up tightly into a log, being gentle to avoid tearing the rice paper. Repeat to make a second roll.
  • Place both rolls on a parchment-lined baking sheet. Bake in an air fryer or a preheated oven with a fan setting at 350°F for about 15 minutes, until golden and crispy.
