- 6 rice paper sheets
- 2 large eggs
- 1 1/2 cups shredded Gouda cheese about 5 oz
- 3-4 slices deli chicken or turkey
- 1/4 cup finely chopped pepperoni
Homemade pizza sauce (or use store-bought one)
- 1/2 cup tomato passata
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tsp dried basil
In a wide, shallow bowl, whisk the eggs until well combined. Dip each rice paper sheet in the egg mixture for about 5 seconds, making sure it’s fully coated.
For each pizza roll, lay 3 rice paper sheets side by side with a slight overlap near the center. Spread a thin layer of pizza sauce, then add a layer of shredded Gouda, chicken or turkey slices, and chopped pepperoni.
Carefully fold the sides of the rice paper over the filling, then roll it up tightly into a log, being gentle to avoid tearing the rice paper. Repeat to make a second roll.
Place both rolls on a parchment-lined baking sheet. Bake in an air fryer or a preheated oven with a fan setting at 350°F for about 15 minutes, until golden and crispy.
