spelt flour
or oat flour

Sliced blanched almonds for decoration

Instructions
Peel the apples and slice them very thinly using a mandoline or sharp knife.
In a mixing bowl, whisk eggs and honey until frothy.
Add vanilla extract, milk, and oil, then whisk briefly to combine.
Add salt, cinnamon, spelt flour, and baking powder, mixing until just combined.
Gently fold in the apple slices, coating them evenly with the batter.
Line a loaf pan with parchment paper and layer the apple slices flat, using your hands for the best “invisible” effect.
Pour any remaining batter over the apples.
Sprinkle with sliced almonds if desired, then bake at 350°F for 1 hour.
Let the cake cool in the pan for 30-45 minutes, then remove and cool further before slicing.
Notes
No sugar, no butter, no wheat flour.
