- 3 medium apples
- 2 tsp ground cinnamon
Batter
- 2 tbsp olive oil or coconut oil
- 1 cup oat flour about 4 oz
- 2 tsp baking powder
- 1/2 cup milk
- 1 tbsp honey
For topping:
- 2 tbsp shredded coconut
- 2 tbsp chopped walnuts
Preheat your oven to 350°F. Grate the apples, mix with cinnamon, and spread evenly in the bottom of a small, parchment-lined baking dish.
In a blender, combine oat flour, baking powder, milk, honey, and olive or coconut oil, blending until smooth. Pour the batter over the apple layer.
Bake for 25-30 minutes, until the top is golden and a toothpick comes out clean. Let it cool slightly before proceeding.
While still warm, carefully flip the cake onto a plate. Sprinkle with shredded coconut and chopped walnuts, then serve!
